Hmmm, what to make for dinner when I get home after working my real job all day?
I have frozen peeled deveined shrimp and four beautiful organic fresh zucchini I picked up from the Common Market Coop. I’ll make my version of spicy 🌶 zucchini noodles with shrimp! I also have to make pasta spaghetti for my hubby,. He likes zucchini but he’s a pasta man!
This is the fun part… making the zucchini noodles!!
I used all four zucchinis. The tool I have is called the Veggetti. Simple, easy to use & easy to clean. No moving parts. I like that! Once the zucchini is “noodlized” it’s time to cook the shrimp 🍤
I start with a pan, a couple tablespoons of minced garlic in some extra virgin olive oil. After the garlic heats up in the oil, I add some wine 🍷 (all I had was white zinfandel), chili oil, sesame oil, teriyaki sauce, and soy sauce. Simmer for a bit until it reduces.
Time to get the pasta spaghetti water boiling in a sauce pan.
Now, after I’ve thawed & rinsed the raw shrimp, I put the them in the simmering pan of wine oil, soy, teriyaki sauce, garlic and cook them just enough to turn the shrimp white, (for about two minutes) flipping the shrimp the often.
I put the first batch of cooked shrimp in a bowl then cook the remaining crustaceans.
While that is cooking, I put the pasta spaghetti in the boiling water and start to remove the tails from the cooked shrimp.
When the shrimp are done, the zucchini noodles go in the pan I cooked the shrimp in so it soaks up all those delicious flavors while it cooks.
Mix it all around with tongs for about two minutes then put the zucchini in the bowl with the shrimp! Toss to combine the shrimp with the zucchini noodles and …

Don’t ask me for measurements or temperatures because I don’t know 😁 and I don’t have recipe anymore. I just wing it!
