Fresh Cucumber Vinegar Salad

I love fresh cucumber vinegar salad! I made it a few nights ago and took some pictures as I made the salad. I added sliced onion and freshly diced tomato, too, but that is optional. My husband likes onions so I added them for him and the tomato for me!

First, I sliced two organic cucumbers with my little red slicer by Cuisinart. The slices were about 1/16″ thick. I peeled most of the skin off, leaving only thin stripes for color.Image

I placed the sliced cucumbers in a large bowl and set aside.

In a medium-sized bowl, I added 1 cup of vinegar and 1 cup of water.


Then I measured 1/4 cup of sugar (yes, real sugar. I’m staying away from artificial sweeteners) and stirred the mixture until all the sugar was dissolved. Image

I added the water, vinegar & sugar mixture into the large bowl of sliced organic cucumbers!


Cover & place in the refrigerator for a few hours before serving for the best flavor.


Slice about 1 cup of your favorite kind of onions, dice 1 organic tomato (1/2″ cubes are nice) and add to large bowl of cucumber, water, vinegar & sugar before placing in the refrigerator!


After the Cucumber Vinegar Salad has chilled in the refrigerator for a few hours, serve!
